What's your 'day' job?

I’m an events producer — I work in experiential marketing in the heart of Shoreditch. It’s right up my alley, as my career has always been in marketing, even when I was back home in Australia.

What's your side hustle?

My side hustle is a fun cakes business called Miss Trixie Drinks Tea. I make fun, wacky cakes, baked goods and sweets for a whole range of clients! I started Miss Trixie as a small dessert blog to share recipes and every sweet I loved — it slowly turned into a blossoming cake and baking business!

How did you get into cakes?

It’s in my blood. My mum has worked in hospitality most of her life — she even owned her own deli when she was about my age. I grew up in a household where food was the thing that brought everyone together. It’s really important in my family and it’s something I bring with me everywhere I go now. I had the super sweet tooth out of everyone; I even used to make my own cooking shows! I am completely self taught. I have had no formal training, but I love experimenting and coming up with new recipe ideas.

How has your current job helped you with your side hustle?

It’s helped me to effectively manage my time. Working in events has taught me how organised you need to be — I apply this when I have lots of orders and cakes to deliver!

What is your biggest money management challenge with your side hustle?

When it comes to money, it’s definitely a challenge keeping track of all my expenses: sorting through the receipts for my supplies and keeping a record of what comes out of my account is my least favourite part of my side hustle!

If I weren’t me, I’d be…

A professional swimmer. I love getting in the pool and doing laps — I was good as a kid!

My Love is Gone by Safia — it’s on repeat. Otherwise, old school ’90s RnB playlists get a very good run!

If you could bake any cake with no time or money constraints, what would you bake?

Well right at this point in time, I would have to make an epic Australian cake as homage to my old hometown of Melbourne. It would be a three tiered extravaganza, each tier inspired by a famous Australian dessert or treat. The top tier would be Lamington, the middle Pavlova and the bottom tier would be my favourite Arnott’s biscuits: Tim Tams, Iced Vovos and Tic Tocs. It would be finished off with gold leaf and all the Miss Trixie elements would be there: drips, shards — the lot! I’m sure I’d sneak some gorgeous edible flowers on there too, as I’m absolutely obsessed.
